Morphological characteristics of the swordfish
Oil is a condiment that is always very present in Mediterranean cuisine and has the dual function of seasoning food and allowing for their long-term preservation. Oil preservation, like the one in extra virgin oil that we use for our Sicilian preserved vegetables, is a preservation process that involves fully immersing the food in oil, isolating it from the air.
It is indeed the contact with oxygen that allows bacteria to develop on products, subsequently altering the organoleptic composition of the food and causing it to spoil. Unlike other preservation methods using salt or sugar, oil preservation does not directly affect the water content inside the product. Thanks to this, the food does not change its organoleptic structure, and oil preservation proves to be ideal for preserving the taste of food for a long time.
Our canned food in oil
Our company has always earned the well-deserved recognition of a wide clientele thanks to our commitment to preserving Sicilian gastronomic traditions. Working diligently and passionately with our Sicilian preserved products, we bring to your tables:
- The best of preserved foods from the land, products coming from fields worked in a natural way and harvested at the exact ripening point
- The best of the catch from our sea, processed on the same day the nets pull it up
We do not use preservatives or artificial colorings, but only natural products such as extra virgin olive oil, salt, sugar, vinegar, or spices. We monitor the sustainability of the environmental impact of each food we select, being careful that the reference chain is very short and transparent.

The goodness of our preserved vegetables
The choice of our Sicilian under oil is solely based on the quality of the products we select and the great care we put into the preservation processes, which are still strictly done by hand to offer you only the best part of the fruit or fish.
The result is products that can be stored for years and that, when opened, are as fresh, tasty, and fragrant as if they had just been picked or just caught from the sea. Foods that maintain all their nutritional properties unchanged and above all preserve all the taste and flavor they deserve.
